  • 1 tsp maple syrup

Coconut Muffins:

  • ¾ cup almond flour
  • ½ cup coconut flour, (I like Nutiva Organic for quality and price)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 eggs
  • ½ cup honey
  • 1 Tbs vanilla extract
  • ½ cup canned coconut milk
  • 2 Tbs coconut oil, (melted)
  • 1 mashed small banana
  • 1/2 cup shredded unsweetened coconut
  • 1/4 cup toasted coconut (from the first step of this recipe)

Whipped Coconut Cream:

  • 1 can full-fat coconut cream, (I like the Savoy brand because the only ingredients are coconut and water, ensure it’s full-fat for whipping)
  • 1 Tbs honey
  • 1 Tbs maple syrup
  • 1 Tbs vanilla extract

Instructions

  1. Place a can of full-fat coconut cream in the refrigerator for at least 2 hours, or preferably overnight. This crucial step allows the thick, solid cream to separate from the clear liquid, which is essential for whipping.
