An amazing apple banana bread made with a dairy-free caramel sauce.

Ingredients

  • ¾ cup almond flour
  • ½ cup coconut flour, (I like the Nutiva Organic brand)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp ground cloves
  • 2 eggs
  • ½ cup honey, (I used a very scant ½)
  • 1 Tbs vanilla
  • ½ cup + 1 Tbs canned coconut cream
  • 2 Tbs coconut oil, (melted)
  • 2 mashed bananas, (this was ½ cup of mashed bananas for me)
  • 1 apple, diced (this was a heaping cup-full for me)
  • 1/2 cup paleo caramel sauce

Instructions

  • Preheat the oven to 350 degrees F (175 C).
  • Line a small metal loaf pan (approx. 9.25 x 5.5 x 2.75 inches) with parchment paper, allowing some overhang on the sides for easy removal.
  • In a small bowl, combine the 1 cup of diced apples with 1/2 cup of your prepared paleo caramel sauce. Stir to coat thoroughly and set aside.
  • In a medium-sized bowl, whisk together the almond flour, coconut flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ground cloves with a fork until well combined. Set aside.
  • In another large bowl, beat the eggs, honey, vanilla, and coconut cream with an electric mixer until smooth and well mixed. Add the melted coconut oil and continue mixing until fully blended. Finally, add the mashed bananas and mix briefly until just combined.
