Peeling them after boiling often makes the skins incredibly easy to remove, practically falling off).
  3. Once the sweet potatoes are cooked through, drain them, peel them (if you haven’t already), and mash them thoroughly in a large bowl. Season generously with salt and pepper according to your preference. Set the mashed sweet potatoes aside. (While traditional champ often includes butter, this paleo version is wonderfully flavorful without it; however, feel free to add a pat of butter if you wish to incorporate it).
  4. In a separate, smaller pot, combine the coconut milk and the thinly sliced scallions. Heat this mixture over medium-high heat for approximately 5 minutes, being careful to ensure the coconut milk does not boil over or scorch at the bottom of the pot. The crucial step here is to ensure the milk is hot when mixed with the potatoes.
  5. Finally, pour the hot coconut milk and scallion mixture into the mashed sweet potatoes.
