Experience a healthy and exquisite taste of Italy with this Poached Halibut in San Marzano Tomato Sauce with Olives recipe. Delicate halibut fillets are gently poached in a rich, vibrant sauce crafted from sweet San Marzano tomatoes, aromatic onions and shallots, savory chicken stock, and a symphony of Mediterranean herbs like Herbes de Provence, marjoram, and briny olives. This dish offers a sophisticated yet remarkably easy way to enjoy perfectly cooked fish, making it an ideal meal for any season, especially a cozy winter evening.

Discover the Art of Poaching for Perfectly Cooked Fish
There’s an undeniable magic to poaching fish, a culinary technique often overlooked in home kitchens. It’s a method I’ve come to embrace wholeheartedly, not only for its simplicity but for the consistently flawless results it delivers. Unlike frying or baking, poaching involves gently simmering fish in a flavorful liquid, which ensures the fillets remain incredibly moist, tender, and infused with the surrounding tastes. This technique prevents the common pitfalls of dry, overcooked fish, making it a reliable choice for both novice and experienced cooks alike.
This Poached Halibut in San Marzano Tomato Sauce with Olives recipe perfectly exemplifies the beauty of poaching. The firm, flaky halibut is delicately cooked within a luscious, aromatic sauce, absorbing every nuanced flavor from the San Marzano tomatoes, fresh herbs, and savory stock. The gentle heat allows the fish to cook evenly, resulting in a melt-in-your-mouth texture that beautifully complements the robust Mediterranean flavors of the sauce.

The Inspiration Behind a Mediterranean Favorite
My journey to perfecting this poached halibut dish began a few weeks ago, driven by a desire to break free from my usual fish preparation routine. I was searching for something distinct, something that would awaken my palate, and I stumbled upon a recipe from Williams-Sonoma: their Halibut with Tomatoes, Olives, and Marjoram. The concept immediately intrigued me – the idea of cooking fish directly in its sauce promised a depth of flavor I hadn’t explored.
Upon trying the original recipe, I was genuinely impressed by how effortlessly delicious and remarkably easy the dish turned out. The fish was incredibly tender, and the sauce provided a wonderful backdrop. However, as with many great recipes, I saw an opportunity to adapt it to my personal preferences, enhancing certain elements to truly make it my own.

My adjustments focused on brightening the flavors and making it even more aligned with a fresh, wholesome approach. I swapped out the wine for a combination of rich chicken stock and bright lemon juice, adding a zesty undertone that beautifully complements seafood. To further elevate the aromatic profile, I incorporated fresh basil and a generous amount of Herbes de Provence – two ingredients that, in my opinion, are soulmates with tomatoes. Finally, I fine-tuned the ingredient proportions to create a harmonious balance that perfectly suited my husband’s and my tastes.
Key Ingredients for a Restaurant-Quality Dish
Every exceptional dish relies on a foundation of quality ingredients, and this Poached Halibut is no exception. Here’s a closer look at the stars of this recipe:
- Halibut: A premium white fish known for its firm texture and mild, sweet flavor. It holds up beautifully to poaching and absorbs the sauce’s flavors wonderfully.
- San Marzano Tomatoes: These are not just any canned tomatoes. Hailing from the rich volcanic soil of Mount Vesuvius, San Marzano tomatoes are renowned for their elongated shape, lower acidity, and exceptional sweetness. They create a sauce with unparalleled depth and natural richness. Look for DOP-certified cans for authenticity.
- Onion & Shallots: These aromatic vegetables form the savory base of our sauce. Sautéing them until tender caramelizes their natural sugars, adding a layer of sweet and savory complexity.
- Chicken Stock: Provides a rich, umami backdrop to the sauce, adding body and flavor.
- Lemon Juice: A splash of fresh lemon juice is crucial. It brightens the sauce, cuts through the richness, and enhances the natural flavor of the halibut.
- Herbes de Provence: A classic French blend typically including savory, marjoram, rosemary, thyme, and oregano. It imparts a fragrant, slightly earthy, and floral aroma that transports you straight to the Mediterranean.
- Marjoram: A delicate herb with a sweet pine and citrus flavor, closely related to oregano but milder. It adds a subtle warmth and elegance to the sauce.
- Basil: Fresh basil is a must for any Italian-inspired tomato sauce. Its sweet, pungent, and peppery notes provide a fresh counterpoint to the cooked tomatoes.
- Olives: Briny Kalamata olives add a delightful salty kick and a textural contrast that makes each bite more interesting. Quartering them ensures their flavor is evenly distributed throughout the dish.
- Red Pepper Flakes: Just a touch provides a subtle warmth and depth without overwhelming the other flavors.

Why This Poached Halibut is Your New Favorite Fish Dish
The culmination of these thoughtful adaptations and high-quality ingredients is a dish that truly stands out. This Poached Halibut in San Marzano Tomato Sauce with Olives has swiftly become my go-to fish recipe for several compelling reasons. The sauce itself is a dream – a sweet tomato base, meticulously seasoned with the caramelized notes of roasted onions and shallots, and vibrant with the generous inclusion of basil and Herbes de Provence. These “spirit spices,” as I affectionately call them, create an aromatic foundation that is both comforting and exhilarating.
The briny Kalamata olives evoke immediate thoughts of sun-drenched Provence and the rustic charm of Italy, adding a necessary savory counterpoint to the sweet tomatoes. And speaking of tomatoes, the imported San Marzano varietals truly make all the difference, delivering an authentic Italian flavor that is simply unparalleled. I’m already planning countless other sauces around them!
Beyond its incredible flavor, this recipe is a nutritional powerhouse. Halibut is an excellent source of lean protein and essential omega-3 fatty acids, crucial for heart and brain health. Combined with the antioxidant-rich tomatoes and healthy fats from olive oil and olives, this dish offers a wholesome, balanced meal. It’s a delightful and effortless way to integrate more fish into your diet, satisfying both your taste buds and your nutritional needs.

Serving Suggestions for Your Mediterranean Feast
This versatile poached halibut dish pairs beautifully with a variety of sides, making it easy to create a complete and satisfying meal. For a classic Italian experience, serve it alongside a generous portion of al dente pasta, creamy polenta, or crusty artisanal bread to soak up every last drop of the delectable sauce. If you’re following a Paleo or gluten-free diet, consider serving it with steamed or roasted vegetables like asparagus, green beans, or zucchini noodles. A simple side salad with a light vinaigrette would also offer a refreshing contrast.
For a truly indulgent meal, consider adding a sprinkle of fresh parsley or a grating of Parmesan cheese (if not adhering to Paleo/GF) just before serving. A glass of crisp, dry white wine like Sauvignon Blanc or Pinot Grigio would be the perfect complement, enhancing the delicate flavors of the fish and the sauce.
Customizing Your Poached Halibut Experience
One of the joys of cooking is the ability to adapt recipes to suit your palate and what you have on hand. While this recipe is fantastic as written, feel free to experiment:
- Different Fish: While halibut is superb, other firm white fish like cod, sea bass, or even swordfish would work well with this poaching method and sauce. Adjust cooking times based on fish thickness.
- Add More Vegetables: Sauté bell peppers (red or yellow) or zucchini alongside the onions and shallots for added color, texture, and nutrients. Spinach or kale could also be wilted into the sauce at the very end.
- Spice It Up: If you love a bit more heat, increase the amount of red pepper flakes or add a pinch of cayenne pepper.
- Capers: For an extra briny, tangy kick, stir in a tablespoon of capers along with the olives.
- Herbal Variations: If you don’t have Herbes de Provence, a mix of dried oregano, thyme, and rosemary will also work beautifully. Fresh parsley or oregano can be added as a garnish.
Frequently Asked Questions (FAQ)
Q: Can I use frozen halibut?
A: Yes, you can! Thaw frozen halibut completely in the refrigerator overnight before using. Pat it very dry with paper towels before seasoning to ensure the best texture.
Q: What if I can’t find San Marzano tomatoes?
A: While San Marzano tomatoes offer superior flavor, high-quality canned crushed or diced tomatoes can be substituted. Look for brands that are naturally sweet and low in acidity for the best results.
Q: Is this recipe truly Paleo and Gluten-Free?
A: Absolutely! This recipe is naturally dairy-free, grain-free, and gluten-free, making it suitable for a Paleo diet and those with gluten sensitivities. Ensure your chicken stock is also gluten-free.
Q: How do I store and reheat leftovers?
A: Store any leftover halibut and sauce in an airtight container in the refrigerator for up to 2-3 days. Reheat gently on the stovetop over low heat, adding a splash of chicken stock or water if the sauce has thickened too much. Be careful not to overcook the fish when reheating.

Ingredients
- 2 tsp olive oil
- a scant 1 cup of diced yellow onion (this was one onion for me)
- 1/4 cup diced shallots (this was 2 medium shallots for me)
- 1/8 tsp red pepper flakes
- 1 cup chicken stock
- 3 Tbs lemon juice
- one (28 oz can) San Marzano tomatoes (with juices)
- ¼ tsp salt
- ¼ tsp ground black pepper
- 1 tsp basil
- 1 tsp herbs de provence, divided
- 1 lb halibut, cut into 1 1/2-inch pieces
- 1/2 cup of pitted kalamata olives that have been quartered lengthwise
- 1 tsp dried marjoram
Instructions
-
Add 2 tsp of olive oil to a large sauté pan. Add the diced onion, diced shallots, and red pepper flakes to the pan and sauté over medium-high heat, while mixing often, until tender, about 6 minutes. Add the chicken stock and lemon juice and boil about 5 minutes. Add the Marzano tomatoes with their juices, and top with 1 tsp dried basil, ½ tsp herbs de provence, and salt and pepper to taste. Reduce the stovetop heat to medium and simmer for 10 minutes. Make sure to push down on the tomatoes until they break up.
-
Season the fish with ¼ tsp salt, ¼ tsp black pepper, and ½ tsp herbs de provence. Add the fish to the pan and cover each piece in the sauce. Cover the pan and simmer until the fish is almost cooked through, about 4 minutes. Flip each fish piece over, add the olives and marjoram to the pan, mix, and let everything simmer until the fish is cooked all the way through, about 2 minutes.
-
Remove the fish from the sauce, remove the skin (it should be easy to remove once the fish is cooked through), and then put the fish back into sauce prior to serving.
