- 1 Tbs olive oil
- 1/4 cup minced yellow onion
- 1 clove garlic, minced
- 1.5 cups shredded carrots

Instructions

- In a large bowl, add the eggs, almond or coconut milk, 1/2 cup of crumbled goat cheese, salt, pepper, and nutmeg together with a whisk. Add 1/2 cup of pine nuts to the egg mixture and mix.
- Once the sweet potato crust is cooked, remove from the oven and reduce the oven heat to 375 degrees F (190°C).
