Instructions
To Prepare the Eggplant:
- Preheat your oven to 400°F (200°C).
- Slice the eggplant into ½-inch thick rounds. Place them on a baking sheet and generously sprinkle with salt. Using a knife, gently score “Xs” onto the surface of each slice. Allow the eggplant to sit for 20 minutes to draw out excess moisture.
- Using paper towels, thoroughly pat down the eggplant slices to remove all released liquid.
- Line a clean cookie sheet with parchment paper and drizzle with olive oil. Arrange the dried eggplant slices on the sheet, flipping them to ensure both sides are lightly coated. Season the eggplant with ½ tsp dried basil, ½ tsp dried oregano, and a sprinkle of ground black pepper. Bake for 30-35 minutes, or until the slices are golden brown and tender. Set aside to cool.
To Prepare the Chicken:
- While the salted eggplant rests, begin cooking the chicken. Heat a splash of olive oil in a large frying pan over medium heat.
- Add the chicken pieces to the hot pan. Season them with 2 Tablespoons lemon juice, ½ teaspoon oregano, ¼ teaspoon salt, and ¼ teaspoon ground black pepper. Cook for about 8-10 minutes, stirring occasionally, until the chicken is golden brown and fully cooked through (internal temperature of 165°F/74°C). Set aside to cool slightly.
To Prepare the Dressing:
- Combine all the dressing ingredients (vinegar, olive oil, lemon juice, Dijon mustard, salt, pepper, mint leaves, dried parsley, garlic powder, and ground turmeric) in a food processor or blender. Process until the mixture is smooth and well emulsified.
- As an alternative, you can prepare a simple classic Greek vinaigrette or balsamic dressing if preferred.
To Assemble the Salad:
- You can either mix all the ingredients together in one large serving bowl or, for better presentation and meal prep, create 4 individual servings/plates.
- For individual plates, take out 4 serving plates or meal prep containers. Place a generous handful of mixed greens on each plate. Evenly distribute ¼ of the sliced cucumbers, diced red pepper, and sliced red onion onto each plate.
- Add approximately 5 cherry tomatoes, 6 Kalamata olives, and a portion of the sliced sun-dried tomatoes to each plate.
- Next, distribute ¼ of the cooled roasted eggplant and ¼ of the grilled chicken onto each plate.
- Finally, sprinkle each plate with a generous portion of crumbled feta cheese.
- Just before serving, drizzle each plate with about 1.5-2 Tablespoons of the prepared dressing. Gently toss to combine all the delicious flavors and textures. Serve immediately and enjoy!
Notes
- You are welcome to use a different type of dressing if it better suits your taste. A simple balsamic vinaigrette or a classic Greek salad dressing are excellent alternatives.
- To make a basic balsamic vinaigrette: whisk together ¼ cup of extra virgin olive oil, 2 Tablespoons of balsamic vinegar, ¼ teaspoon of Dijon mustard, ½ teaspoon of dried oregano, and season with salt and freshly ground black pepper to taste.
