The slow cooking process allows these seasonings to fully infuse the meat and vegetables, creating a truly memorable dish.
  • Allergy-Friendly & Inclusive: Designed with dietary needs in mind, this stew is naturally dairy-free, gluten-free, grain-free, and nut-free. This makes it an excellent choice for individuals with common allergies or sensitivities, ensuring everyone at the table can enjoy a hearty, delicious meal without compromise.
  • Packed with Healthy Ingredients: We believe that delicious food can also be incredibly nutritious. This stew is made with a foundation of wholesome ingredients like lean beef, nutrient-rich carrots, satisfying potatoes, and beneficial mushrooms, providing essential vitamins, minerals, and fiber to fuel your body.
  • Effortless Preparation: The beauty of a slow cooker meal is its “set it and forget it” nature. After a quick searing of the beef to lock in flavor, all the ingredients are simply combined in the slow cooker and left to simmer to perfection. This hands-off approach makes it perfect for busy weeknights or when you want a delicious meal without constant attention. Essential Ingredients for Your Paleo Irish Stew

Crafting a truly exceptional beef stew begins with selecting quality ingredients. Here’s a closer look at what you’ll need and why each component is crucial to this recipe’s success:

Ingredients needed to make healthy Irish beef stew.
  • Carrots: Whether you opt for large carrots cut into chunks or convenient baby carrots, ensure they are roughly bite-sized. Carrots add natural sweetness, color, and a vital source of vitamins to the stew.
  • Potatoes: While gold potatoes are recommended for their creamy texture and superior flavor, feel free to use your preferred potato variety. Cutting them into larger chunks helps them hold their shape during the long cooking process.
  • Stew Meat (Beef Chuck): The quality of your beef is paramount. Opt for high-quality beef chuck or pre-cut stew meat. This cut, rich in connective tissue, breaks down beautifully over low heat, becoming incredibly tender and flavorful.
  • Fresh Onion: Diced onion is essential for building the foundational flavors of the stew. It caramelizes when browned with the meat, adding a layer of sweet, savory depth.
  • Fresh Garlic: Freshly minced garlic provides an aromatic punch, complementing the onion and beef. It’s key to the stew’s robust seasoning.
  • Tomato Paste: This concentrated paste serves multiple purposes. It helps to create a rich, savory crust on the beef during searing and adds a subtle umami depth and vibrant color to the stew’s liquid base.
  • Beef Broth (or Bone Broth): A high-quality beef broth forms the liquid foundation of our stew. I particularly love using bone broth for its enhanced nutritional profile and deeper, richer flavor.
  • Apple Juice: In this Paleo and Whole30 friendly recipe, apple juice ingeniously replaces the wine often found in traditional Irish stew recipes. It provides a touch of sweetness and acidity, balancing the savory notes without adding alcohol.
  • Dried Rosemary: This aromatic herb lends a classic, earthy, and slightly piney flavor that is quintessential to hearty stews.
  • Chili Powder: A hint of chili powder adds a subtle warmth and complexity, enhancing the overall spice blend without making the stew overtly spicy.
  • Dried Thyme: Thyme contributes another layer of classic savory, earthy notes, perfectly complementing the beef and vegetables.
  • Blackstrap Molasses: This ingredient is a fantastic secret weapon for adding a deep, complex, and slightly sweet flavor, serving as an excellent Whole30-compliant alternative to Worcestershire sauce. Note: If you are strictly following a Whole30 diet, you should omit blackstrap molasses as it is not considered compliant.
  • Paprika: Paprika adds a mild, sweet pepper flavor and a beautiful reddish hue to the stew, contributing to its appetizing appearance and taste.
  • Mushrooms (Baby Bella): Quartered baby bella mushrooms add an extra layer of umami richness and a wonderful texture to the stew. While highly recommended for their depth, they can be omitted if you prefer.
  • Tapioca Flour: Used in a slurry with water, tapioca flour is an excellent gluten-free thickener, giving the stew its desired comforting, thick consistency.

Versatile Additions & Simple Substitutions

One of the joys of cooking is the ability to adapt recipes to your taste preferences or what you have on hand. This Irish beef stew is incredibly versatile, allowing for several easy adjustments:

  • Onion Alternatives: If you don’t have fresh onion, onion powder is a convenient substitute. Use approximately 1 1/2 teaspoons of onion powder to replace one large fresh onion for similar savory notes.
  • Garlic Alternatives: Similarly, if fresh garlic isn’t available, garlic powder works well. About 1 teaspoon of garlic powder can replace four cloves of fresh garlic.
  • Broth Options: While beef broth or bone broth provides the most traditional flavor, you can certainly use chicken broth if that’s what you have. It will still yield a delicious stew, perhaps with a slightly lighter flavor profile.
  • Replacing Apple Juice: If you prefer to omit apple juice, simply use an equal amount of additional beef broth. This will result in a less sweet, more intensely savory stew.
  • Molasses Substitutions: For those needing a substitute for blackstrap molasses, maple syrup or date syrup can be used for sweetness. However, be aware that the unique, deep, slightly bitter notes of blackstrap molasses will alter the final flavor. If strictly Whole30, remember to omit molasses entirely.
  • Mushroom Preference: Mushrooms are a wonderful addition for their umami depth, but if you’re not a fan, feel free to skip them entirely. The stew will still be incredibly flavorful.
  • Thickener Alternatives: If tapioca flour isn’t available, arrowroot starch is an excellent 1:1 gluten-free substitute, providing a similar thickening consistency.
  • Add More Vegetables: Feel free to toss in other root vegetables like parsnips or rutabaga for added nutrition and flavor. Green peas or spinach can be stirred in during the last 30 minutes of cooking for a fresh touch.
  • Herb Variations: Experiment with fresh herbs like parsley or bay leaves. A bay leaf is already included in the recipe, but fresh herbs added at the end can brighten the dish.

Easy Step-by-Step Instructions for the Perfect Stew

Making this hearty Irish beef stew in your slow cooker is a straightforward process. Follow these simple steps for a comforting meal that practically cooks itself:

Carrot and potatoes in crock pot.
Step 1: Layer the vegetables

Step 1: Prepare Your Slow Cooker Base. Begin by placing all the cut carrots and potatoes evenly into the bottom of your large slow cooker. This creates a sturdy base and allows these denser vegetables to cook thoroughly. Ensure your pieces are roughly 1-inch chunks for even cooking.

Seared beef.
Step 2: Sear the beef for flavor

Step 2: Sear the Beef to Lock in Flavor. Heat the olive oil in a large skillet over medium-high heat. Add the beef cubes, diced onion, minced garlic, tomato paste, 1 teaspoon of salt, and 1/2 teaspoon of ground pepper to the pan. Mix well to coat the meat and cook for about 3 minutes, stirring occasionally, until the beef is nicely browned on all sides. This crucial step develops a rich, savory crust that adds immense depth of flavor to your stew. Once browned, transfer the meat and all pan drippings directly on top of the vegetables in the slow cooker.

Step 3: Add liquids and spices

Step 3: Combine Liquids and Seasonings. Pour the beef broth, apple juice, and blackstrap molasses (if using) into the slow cooker. Then, add the remaining seasonings: 1 teaspoon dried rosemary, 1.5 teaspoons garlic powder, 1/2 teaspoon chili powder, 1 teaspoon salt, 1/2 teaspoon pepper, 1 teaspoon dried thyme, 1 bay leaf, and 1/2 teaspoon paprika. Gently stir the seasonings into the liquid, ensuring they are well dispersed and coating the ingredients.

Step 4: Slow cook to perfection

Step 4: Slow Cook and Thicken. Cover the slow cooker with its lid and cook on the “High” setting for 5 hours, or on the “Low” setting for 8 hours. This extended cooking time allows the beef to become incredibly tender and the flavors to fully develop.

Mid-Cook Addition: If you are including mushrooms, add the quartered baby bella mushrooms after the first 4 hours of cooking. This prevents them from becoming overly soft or mushy.

Final Thickening: During the last hour of cooking, prepare a slurry by dissolving the 2 tablespoons of tapioca flour in 2 tablespoons of cold water in a small bowl. Stir this mixture thoroughly into the stew. Recover the slow cooker and allow it to cook for the remaining hour, which will thicken the stew to a rich, comforting consistency.

Frequently Asked Questions About Irish Beef Stew

Here are some common questions about making and enjoying this delicious Paleo Irish Beef Stew:

How do you store this stew?

Once cooled, transfer any leftover stew to an airtight container. It will keep beautifully in the refrigerator for up to 4 days. For longer storage, this stew freezes exceptionally well for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave.

What thickens Irish stew?

Traditionally, Irish stew is often thickened with a roux made from flour and butter, or with cornstarch. For this Paleo and Whole30 friendly version, we use tapioca flour (or arrowroot powder/starch) dissolved in water to create a smooth, gluten-free slurry that effectively thickens the stew without altering its flavor or dietary compliance.

What do you serve with it?

This hearty stew is a meal in itself, but it truly shines when served with complementary sides. I love pairing it with a crusty gluten-free bread for dipping into the rich broth, or a crisp side salad to add a fresh, vibrant contrast. For a truly Irish experience, consider serving it with a side of steamed cabbage or even more of those healthy potato pancakes!

Can I make this stew ahead of time?

Absolutely! In fact, many stews, including this one, taste even better the next day as the flavors have more time to meld and deepen. Prepare it a day in advance, let it cool completely, then refrigerate. Reheat gently on the stovetop over low heat, stirring occasionally until warmed through.

Why sear the meat before slow cooking?

Searing the beef cubes before adding them to the slow cooker creates a delicious caramelized crust on the outside of the meat. This process, known as the Maillard reaction, adds significant depth of flavor and a rich, savory dimension to the stew that you wouldn’t get if you simply put raw meat into the slow cooker. It’s an extra step that makes a big difference in the final taste.

Paleo beef stew in a bowl with a spoon in the bowl.
This slow cooker Paleo Irish beef stew is a rich and satisfying crock pot recipe where beef, carrots, potatoes and mushrooms are seasoned with tomato, beef broth and lots of spices until tender.

Ingredients

  • 1 lb carrots, cut into 1 inch chunks
  • 1.5 lbs potatoes, cut into larger diced chunks (I used dutch baby yellow potatoes and cut them in fourths)
  • 2 Tablespoons olive oil
  • 2 lbs beef chuck or stew meat, cut into 1 1/2-2 inch cubes
  • 1 onion, diced large
  • 4 cloves garlic, diced
  • 3 Tablespoons tomato paste
  • 2 teaspoons salt (1 teaspoon for meat, 1 teaspoon for slow cooker)
  • 1 teaspoon pepper (1/2 teaspoon for meat, 1/2 teaspoon for slow cooker)
  • 3 cups beef broth
  • 1 cup apple juice
  • 2 Tablespoons blackstrap molasses (omit if following a Whole30 diet)
  • 1 teaspoon dried rosemary
  • 1 1/2 teaspoons garlic powder
  • ½ teaspoon chili powder
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • 10 ounces baby bella mushrooms, quartered
  • 2 Tablespoons water
  • 2 Tablespoons tapioca flour

Instructions

  1. Place the cut carrots and potatoes into a large slow cooker.
  2. Brown the meat. Heat the olive oil in a large skillet over medium-high heat. Put the beef cubes, diced garlic, diced onion, tomato paste, 1 tsp salt and 1/2 tsp ground pepper in pan, mix and cook until browned, about 3 minutes. Place the browned meat on top of the vegetables in the slow cooker.
  3. Add the beef broth, apple juice, and blackstrap molasses to the slow cooker. Top with all the stew seasoning (1 tsp dried rosemary, 1.5 tsp garlic powder, 1/2 tsp chili powder, 1 tsp salt, 1/2 tsp pepper, 1 tsp dried thyme, 1 bay leaf, 1/2 teaspoon paprika). Mix the seasoning into the liquid in the slow cooker.
  4. Cover and cook on High for 5 hours (or Low for 8 hours). After 4 hours of cooking, add the quartered mushrooms. During the last hour of cooking, dissolve the tapioca flour in water in a small bowl, and then stir the mixture into the broth.

Notes

  • Instead of fresh onion, you can use onion powder. I would use 1 1/2 teaspoons in the recipe to replace the onion.
  • Instead of fresh garlic, you can use garlic powder. I would use 1 teaspoon of garlic powder.
  • Instead of beef broth, you can use chicken broth or any kind of bone broth.
  • Instead of apple juice, you can add more beef broth.
  • Instead of blackstrap molasses, you can use maple syrup, but the flavor won’t be as distinct. Remember to omit molasses entirely for strict Whole30.
  • You don’t have to use mushrooms at all if you don’t like them.
  • Instead of tapioca flour, you can use arrowroot starch.
