Essential Ingredients for Perfect Creamed Peas

- Butter: The foundation of our rich sauce. Using a high-quality butter is key here, as it imparts a delicious, nuanced flavor that forms the heart of the dish. For the dairy-free version, simply substitute with olive oil or your favorite vegan butter alternative.
- All-Purpose Flour: This ingredient creates the roux, thickening the sauce to that perfect, velvety consistency. Unbleached all-purpose flour works wonderfully, creating a smooth and lump-free base when properly whisked.
- Milk: The liquid base that transforms the roux into a creamy sauce. Whole milk provides the richest flavor and texture, but feel free to use any kind of milk you have on hand. For a dairy-free option, unsweetened almond milk is an excellent choice.
- Salt and Black Pepper: These essential seasonings elevate and enhance all the flavors in the sauce. Start with the recommended amounts and adjust to your personal preference, tasting as you go.
- Nutmeg: A crucial ingredient that adds a warm, sweet, and subtly creamy note to the sauce. Freshly grated nutmeg offers the most aromatic punch, truly making this dish sing. Don’t skip this unique spice!
- Canned Peas: For convenience and consistent results, canned sweet peas are ideal for this recipe. Their tenderness and slightly sweet flavor marry perfectly with the creamy sauce. If using frozen peas, ensure they are thawed and drained thoroughly. Fresh peas can also be blanched and used for an even brighter flavor.
- Optional – Fresh Lemon Juice: A light squeeze of fresh lemon juice at the end brightens the entire dish, cutting through the richness and adding a delightful zesty finish. It’s an optional but highly recommended touch for an extra burst of flavor.

Customizing Your Creamed Peas: Additions and Substitutions
- Dairy-Free & Vegan Version: To effortlessly transform this recipe into a dairy-free and vegan delight, simply swap the traditional butter for an equal amount of high-quality olive oil. Similarly, replace regular milk with unsweetened almond milk. These substitutions maintain the creamy texture and comforting flavor profile while catering to specific dietary needs.
- Alternative Vegetables: While peas are the star, you can experiment with other vegetables for a different twist. Creamed white beans or green beans can be made using the same flavorful sauce base, offering a delicious variation. Ensure any substituted vegetables are cooked to a tender consistency before adding them to the sauce.
- Flavor Boosters: For those who love to experiment with seasonings, consider adding a pinch of garlic powder for an aromatic depth, a dash of smoked paprika for a subtle smoky warmth, or even a tiny amount of sugar to enhance the sweetness of the peas. Remember to taste as you add to achieve your desired flavor balance.
- Herbal Enhancements: Fresh herbs can significantly elevate this dish. A sprinkle of finely chopped fresh parsley or dill at the end can add a vibrant, fresh note that complements the creamy sauce beautifully. Chives also work well for a mild oniony touch.
Step-by-Step Guide to Making Creamed Peas

Step 1: Prepare the Roux. Begin by adding the butter to a medium-sized pan over medium-low heat. Allow the butter to fully melt until it’s shimmering. If you are preparing the dairy-free version, add olive oil to the pan instead and heat for a few seconds. Once your fat base is ready, sprinkle in the flour. Using a whisk or a fork, mix the flour into the melted butter or oil constantly until it forms a cohesive, clumpy paste. This is your roux, the thickening agent for the sauce.
Next, gradually pour in the first cup of milk (or almond milk for dairy-free), whisking continuously to break up any lumps and ensure a smooth consistency. Bring the mixture to a gentle boil, continuing to whisk as it thickens. The sauce will become quite thick at this point. Allow it to sit for a few minutes off the direct heat, then add the second cup of milk (or almond milk), whisk again, and let it sit. Continue to whisk occasionally until the sauce reaches your desired luxurious thickness.
Finally, season the sauce generously with salt, freshly ground black pepper, and the essential nutmeg. Stir well to combine all the flavors evenly.

Step 2: Incorporate Peas and Serve. Once your creamy sauce has reached the perfect consistency and is seasoned to perfection, turn off the heat. Carefully drain your can of peas thoroughly and then add them directly into the warm sauce. Gently fold the peas into the sauce, ensuring they are evenly coated. A light simmer at this point, if needed, will warm the peas through without overcooking them.
Taste and adjust any seasonings if necessary – perhaps a touch more salt, pepper, or nutmeg. For an optional bright finish, a light sprinkle of fresh lemon juice over the top just before serving can truly elevate the flavors. Serve your comforting creamed peas immediately as a delightful side dish to your favorite main course.
Expert Tips for Flawless Creamed Peas
- Mastering Sauce Consistency: The beauty of this sauce is its adaptability. You have full control over its thickness. If you find the sauce too thin, gradually whisk in a small amount of additional flour (about half a teaspoon at a time) and let it cook for a minute to activate the thickening power. Conversely, if it becomes too thick, slowly add more milk (or almond milk) until your desired consistency is achieved. Patience is key; often, the sauce will thicken on its own as it cools slightly, so it’s wise to wait a few minutes before making adjustments.
- Seasoning to Perfection: My preferred seasonings for this classic recipe are simple: salt, pepper, and nutmeg. However, don’t hesitate to customize! Feel free to experiment with other aromatics like a pinch of garlic powder for savory depth, a dash of sweet or smoked paprika for color and a hint of warmth, or even a touch of sugar to complement the sweetness of the peas. Always taste and adjust to your personal preference.
- The Lemon Juice Secret: While optional, a small squeeze of fresh lemon juice is a game-changer. It adds a bright, tangy counterpoint that cuts through the richness of the creamy sauce, elevating the overall flavor profile. I recommend trying a small spoonful of the peas both with and without the lemon to discover your preference.
- Preventing Lumps in the Roux: When adding flour to melted butter or oil, ensure you whisk vigorously and continuously. If you’re struggling with lumps, remove the pan from the heat briefly while whisking, then return it to low heat. Adding the milk gradually, a little at a time while whisking, is also crucial for a smooth sauce.
- Choosing Your Peas: While canned peas are convenient and work perfectly, frozen peas (thawed and well-drained) can also be used for a slightly fresher taste. If using fresh peas, blanch them briefly in boiling water until tender-crisp before adding them to the sauce.

Serving Suggestions and Storage Tips
Creamed peas are an incredibly versatile side dish that complements a wide array of meals. They are a classic pairing for roasted or grilled meats like chicken, pork, or beef, offering a comforting contrast to savory main courses. They also make a fantastic accompaniment to fish, such as baked cod or pan-seared salmon, adding a touch of richness. Don’t limit them to just dinner; they can be a delightful addition to a hearty brunch spread or even a holiday feast.
Storage: To store leftover creamed peas, transfer them to an airtight container and refrigerate promptly. They will keep well for up to 3-4 days. For best quality, avoid freezing creamed peas, as the creamy sauce can sometimes separate or become grainy upon thawing.
Reheating: When reheating, gently warm the creamed peas in a saucepan over low heat, stirring frequently. If the sauce has thickened too much in the refrigerator, you may need to add a splash of milk (or almond milk) to achieve the desired consistency. Avoid high heat, which can cause the sauce to break.

Ingredients
- 2 Tbs butter, (or olive oil for a dairy-free option)
- 1/4 cup flour
- 2 cups milk, (or almond milk for a dairy-free option)
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/8 tsp nutmeg
- 1 can peas
- optional- lemon juice
Instructions
-
Add butter to the pan and heat over medium-low heat. Once it is melted, add the flour and mix with a whisk or fork until it clumps.Note: if you are using olive oil, just add the flour to it after a few seconds.
-
Add 1 cup milk or almond milk and then whisk, breaking up clumps as you go. Let the mixture boil and thicken while whisking. Then let it sit for a few minutes. The sauce will be very thick. Then Add another 1 cup of milk or almond milk, whisk, and let it sit. Whisk every so often until sauce reaches desired thickness.
-
Add salt, pepper and nutmeg and mix.
-
Turn off heat.
-
Add 1 can of peas and mix. Season with more salt or nutmeg to taste.
-
Optional- After serving, sprinkle lemon juice on top. Test this out with a small area to make sure you like it first.
Notes
- When making the sauce, you can easily make the consistency more or less thick. If you need to thicken it, add flour. If you need to thin it out, add more milk. I recommend waiting before taking action because the sauce thickens on its own with time.
- I prefer only salt, pepper and nutmeg in this sauce. Feel free to add garlic powder, paprika or sugar to change the taste to your liking.
- Try the peas as they are, but then also try to add a sprinkle of lemon juice to see how you like the flavor.
