Why This Creamy Beef Stew Recipe Works

  • **It’s an Exceptional Meal Prepping Solution.**

Preparing this beef stew on a Sunday means you’ll have delicious and nutritious Paleo-friendly meals ready for several days of the upcoming week. This significantly streamlines your healthy eating efforts, eliminating the need for last-minute cooking when time is short. The flavors in this slow cooker stew actually deepen and meld beautifully overnight, making leftovers even more enjoyable and satisfying. It’s a smart strategy for staying on track with your dietary goals while savoring truly comforting food.

  • **It Delivers Unforgettable Flavor.**

Every spoonful of this stew is an explosion of savory goodness. Imagine tender, melt-in-your-mouth beef, infused with aromatic paprika and fragrant rosemary. Each bite is complemented by perfectly cooked carrots and rutabagas, vibrant kale, and sweet red pepper, all enveloped in a rich, creamy tomato sauce delicately spiced with thyme and nutmeg. The warmth from the paprika and a hint of diced red pepper provides a wonderful, subtle heat, which is beautifully mellowed by the luscious coconut cream, creating a complex and utterly delicious profile that truly stands out.

  • **It’s Incredibly Easy and Cooks Itself!**

One of the greatest advantages of this recipe is its hands-off nature. After a quick initial sear of the beef and sauté of aromatics, all ingredients are simply combined in your slow cooker. Then, the magic happens. The slow cooker gently simmers the stew for hours, breaking down the beef to fork-tender perfection and allowing the flavors to fully develop with minimal effort on your part. This means you can go about your day, whether it’s working, running errands, or simply relaxing, knowing a wholesome, gourmet-quality meal is preparing itself.

Additions and Smart Substitutions

This creamy beef stew recipe is wonderfully adaptable, allowing for various additions and substitutions to suit your preferences, what you have on hand, or specific dietary needs. Feel free to get creative and make it your own!

  • Onion Alternatives: If yellow onion isn’t available or you prefer a milder flavor, you can easily use shallots. Shallots offer a more delicate, sweeter onion flavor that beautifully complements the other ingredients. Alternatively, for ultimate convenience, two teaspoons of onion powder can be used in place of fresh onion, especially if you’re short on time or fresh produce.
  • Coconut Cream Substitutes: While canned coconut cream provides a rich, dairy-free creaminess, you can substitute it with full-fat canned coconut milk for a slightly lighter texture, though still wonderfully creamy. For those seeking other dairy-free creamer options, many plant-based creamers work well; I’ve had great success with nutpods unsweetened creamer, which offers a neutral base that lets the other flavors shine.
  • Making it Whole30 Compliant: To ensure this delicious stew adheres strictly to Whole30 guidelines, simply omit the maple syrup. The stew will still be incredibly flavorful thanks to the natural sweetness from the carrots and rutabaga, and the rich depth of the tomatoes and spices.
  • Carrot Choices: While baby carrots are convenient, don’t hesitate to use regular carrots. Simply peel them and cut them into robust 1.5-2 inch pieces. I personally love a generous amount of carrots in my stew, often opting for 4-6 medium-sized carrots to add more sweetness and hearty texture to the dish.
  • Root Vegetable Variety: Rutabaga brings a unique, slightly peppery, and sweet flavor to the stew, with a texture similar to a firm potato. However, if rutabaga is difficult to find in your local grocery store, parsnips make an excellent substitute, offering a similar sweetness and earthiness. For a different twist, sweet potatoes or regular potatoes can also be used, providing a comforting and familiar addition.

Step-by-Step Slow Cooker Stew Instructions

Creating this flavorful slow cooker beef stew is a straightforward process, designed to give you maximum flavor with minimal fuss. Follow these simple steps for a perfect, comforting meal:

Seared meat in frying pan.
Step 1

Step 1: Prepare the Spices and Sear the Meat. Begin by combining salt, pepper, paprika, and dried rosemary in a small bowl, mixing them thoroughly to create your seasoning blend. In a large frying pan, heat olive oil over medium-high heat. Add the minced garlic, minced onion, and tomato paste to the hot pan, stirring with a spatula. Cook for 1-2 minutes until fragrant, allowing the tomato paste to caramelize slightly. Next, add your beef stew meat to the pan and generously sprinkle the prepared spice mixture over it. Sear the meat for 2 minutes on one side, then flip and sear for another 1-2 minutes until nicely browned. This initial searing step is crucial for locking in the rich beef flavor and creating a beautiful crust.

Step 2

Step 2: Transfer and Thicken. Carefully transfer all the seared meat from the frying pan into your slow cooker. Make sure to scrape any delicious bits of caramelized onion, garlic, and tomato paste from the pan and add them to the slow cooker as well, as these add significant depth of flavor. Sprinkle one tablespoon of coconut flour directly over the meat in the slow cooker. Using a spatula or large spoon, mix the coconut flour thoroughly with the meat. This will help to thicken the stew as it cooks, giving it a wonderfully creamy and hearty consistency.

Step 3:

Step 3: Combine and Slow Cook. Now, add the remaining liquid ingredients to the slow cooker: the creamy coconut cream, rich strained tomatoes, flavorful chicken stock, and a touch of maple syrup (if using). Stir everything gently with a spatula to ensure all the liquids are well combined with the meat. Finally, add your vegetables: the carrots, diced rutabaga (or parsnip), chopped kale, diced red pepper, and the final seasonings of ground nutmeg and dried thyme. Give it one last thorough mix with your spatula, ensuring all ingredients are evenly distributed throughout the slow cooker. Place the lid on your slow cooker and set it to cook on a high setting for 6-6.5 hours, or on a low setting for 9 hours. This extended cooking time allows the flavors to meld beautifully and the beef to become incredibly tender.

How to Serve Your Delicious Stew

This creamy beef stew is wonderfully versatile and can be enjoyed in a multitude of ways. Its rich flavor and hearty texture make it a complete meal on its own, but it also pairs beautifully with various sides to enhance your dining experience:

  • **Enjoy it Simply On Its Own:** The stew is so flavorful and packed with tender beef and vegetables that it makes a perfectly satisfying meal all by itself. Serve it warm in a large bowl, perhaps with a sprinkle of fresh parsley for a pop of color and extra freshness. It’s comforting, fulfilling, and absolutely delicious as is.
  • **Pair with Roasted Vegetables:** For an extra boost of nutrients and a delightful textural contrast, serve this stew alongside or on top of other roasted vegetables. Roasted sweet potatoes, parsnips, or even roasted eggplant can add a lovely sweetness and earthy depth, creating a more robust and varied meal.
  • **Serve Over Pasta for a Stroganoff Twist:** Transform your meal into a hearty, stroganoff-esque delight by serving this rich beef stew over a bed of your favorite pasta. Whether you opt for traditional pasta, a gluten-free alternative, or even quinoa pasta, the combination of creamy stew and al dente noodles is incredibly comforting and satisfying.
  • **Alongside Crusty Bread:** There’s nothing quite like using a piece of warm, crusty bread or toasted garlic bread to soak up every last drop of the savory, creamy broth. The bread provides a wonderful textural contrast and ensures no delicious flavor goes to waste, making for a truly indulgent experience.

Storage Tips for Leftovers

This hearty beef stew is an excellent candidate for meal prepping, and it stores beautifully, allowing you to enjoy its delicious flavors for days after preparation. Proper storage ensures both safety and quality:

  • In the Refrigerator: Once the stew has cooled completely, transfer it to an airtight container. It will keep fresh and delicious in the refrigerator for 3-4 days. Always ensure it’s fully cooled before refrigerating to maintain food safety and quality.
  • In the Freezer: For longer storage, this beef stew freezes exceptionally well. Portion the cooled stew into freezer-safe containers or heavy-duty freezer bags. It can be stored in the freezer for up to 3 months. When you’re ready to enjoy it, simply thaw in the refrigerator overnight and reheat gently on the stovetop or in the microwave until thoroughly warm.

Frequently Asked Questions

(1) How can I add more protein to beef stew?

To significantly boost the protein content of your beef stew, a simple yet effective method is to use bone broth instead of regular chicken stock. Bone broth is rich in collagen and amino acids, providing a substantial protein punch that not only enhances the nutritional value but also adds a deeper, more robust flavor to your dish. Additionally, ensuring a generous amount of lean beef stew meat is used will naturally increase the protein per serving, making for a more satisfying and muscle-supporting meal.

(2) What green vegetables are good for beef stew?

Kale is an excellent choice for beef stew due to its hearty texture and nutrient density, as highlighted in this recipe. However, there are many other green vegetables that complement beef stew wonderfully. Consider adding chopped green beans for a tender-crisp element, or swiss chard or collard greens, which, like kale, stand up well to long cooking times and infuse the stew with their distinct, slightly bitter notes, balancing the richness of the beef and cream.

(3) When should I add Kale to my soup?

For a slow cooker beef stew, kale should typically be added along with the other main ingredients at the beginning of the cooking process. Kale is a robust green that can withstand prolonged simmering without becoming mushy or losing its integrity. Adding it early allows its flavors to meld fully with the stew and its texture to soften perfectly. If you prefer your kale slightly firmer or brighter in color, you can add it during the last hour or two of cooking, ensuring it remains on top of the other ingredients in the slow cooker.

(4) What can I add to beef stew for more flavor?

This recipe already builds a fantastic flavor base with onion, garlic, rosemary, paprika, nutmeg, and thyme. If you’re looking to further enhance the taste, consider adjusting the sweetness by adding a bit more or less maple syrup to your preference. For an umami boost, a dash of coconut aminos can introduce a savory depth. A pinch of chili powder can add a smoky warmth, while a bay leaf or two, added at the beginning of cooking, can provide a subtle, herbaceous background note that truly elevates the stew’s complexity.

(5) How do I thicken Paleo stew?

For a Paleo-friendly stew, traditional flour thickeners are out. Instead, excellent alternatives include coconut flour, which is used in this recipe and provides a subtle tropical flavor and good thickening power. Other popular options are arrowroot powder or tapioca flour. When using these, it’s best to create a slurry with a small amount of cold water or stew liquid before stirring it into the hot stew towards the end of the cooking process, allowing it to thicken without clumping.

A delicious slow cooker crockpot recipe full of beef, kale, red peppers, and carrots and seasoned with paprika, tomato, nutmeg, and thyme.

Ingredients

  • 2 Tbs olive oil
  • 2.5 pounds beef cubes, (steak tips, stew meat)
  • 4 tsp minced garlic, (This was 6 smaller cloves of garlic for me)
  • 1 cup minced yellow onion, (this was one onion for me)
  • 2 Tbs tomato paste
  • 2 tsp salt
  • 1 tsp ground black pepper
  • 2 tsp paprika
  • 1 tsp dried rosemary
  • 1 Tbs coconut flour
  • 1/2 cup canned coconut cream, (or coconut milk)
  • 2 cups strained tomatoes, (Pomi is my favorite brand, made with only tomatoes)
  • 2 cups chicken stock, (1-2 cups)
  • 1 Tbs maple syrup
  • 2 cups baby carrots, (or 4-6 regular sized carrots cut into 1.5 inch pieces)
  • 1 medium-large rutabaga, peeled and diced (or 2 parsnips)
  • 4-6 cups chopped kale
  • 1 cup diced red pepper
  • 1/4 tsp ground nutmeg
  • 1/2 tsp dried thyme

Instructions

  1. In a small bowl, combine the salt, pepper, paprika, and rosemary, mixing them thoroughly to create your seasoning blend. Set aside.
  2. In a large frying pan, heat the olive oil over medium-high heat. Add the minced garlic and minced yellow onion to the pan. Stir with a spatula and cook for 1-2 minutes until the onions begin to soften and become fragrant. Add the tomato paste to the pan, mix well with the garlic and onion, and cook for another minute, allowing it to deepen in color.
  3. Place the beef stew meat into the pan and sprinkle the prepared spice blend evenly over the meat. Sear the meat for approximately 2 minutes per side until it develops a nice brown crust. This step adds a crucial layer of flavor to the stew.
  4. Carefully transfer all the seared meat, along with any delicious fond (browned bits) from the bottom of the pan, into your slow cooker. Ensure you scrape every flavorful morsel into the pot.
  5. Sprinkle 1 tablespoon of coconut flour over the meat in the slow cooker. Using a spatula, mix the flour thoroughly with the meat. This will help to naturally thicken your stew as it cooks.
  6. Pour the coconut cream, strained tomatoes, chicken stock, and maple syrup (if using) into the slow cooker over the meat. Stir gently with a spatula to ensure all the liquid ingredients are well combined.
  7. Next, add the prepared vegetables: carrots, diced rutabaga (or parsnip), chopped kale, and diced red pepper. Sprinkle in the ground nutmeg and dried thyme. Give the entire mixture one final stir with a rubber spatula to evenly distribute all the ingredients throughout the slow cooker.
  8. Place the lid securely on your slow cooker. Cook on a high setting for 6 to 6.5 hours, or on a low setting for 9 hours. The longer cooking time will ensure the beef is incredibly tender and the flavors are fully developed.
  9. Before serving, give the stew a good stir to incorporate all the delicious components. Ladle into bowls and enjoy your hearty, homemade creamy beef stew!

Notes

Note: My original recipe only called for 1 cup of chicken stock, but I find 2 cups results in a better liquid ratio, creating a more succulent and moist stew.
