Delightfully Fluffy Paleo Chocolate Chip Cinnamon Cookies: A Journey from Inspiration to Indulgence
Embark on a culinary adventure that culminates in these exquisitely fluffy, paleo, gluten-free, and non-processed Chocolate Chip Cinnamon Cookies. This isn’t just a recipe; it’s the delicious outcome of a fascinating chain of baking events, proving that some of the best creations stem from unexpected inspirations.
The Unexpected Genesis: A Cookie Chain of Events
My journey to creating these incredible paleo cookies began quite serendipitously, sparked by a simple act of kindness. Baking a batch of cookies for a friend brought back vivid memories of my absolute favorite oatmeal cookies – a nostalgic taste I hadn’t savored since embracing the Paleo lifestyle. The craving was undeniable, and that very night, I found myself in the kitchen, recreating those beloved oatmeal cookies, albeit in their traditional form.
It had been a considerable time since I last made them, a period spanning my entire commitment to the Paleo diet. Relishing every moment of baking and, more importantly, eating those familiar treats, an idea began to simmer. What if I could capture that same comforting essence, that perfect soft-baked texture and rich flavor, within the confines of Paleo principles?
Experimentation and Evolution: From Cobbler to Cookie
Inspired by the distinct ingredients, unique baking technique, and unparalleled flavor of my favorite oatmeal cookies, I was eager to adapt a similar approach to Paleo baking. This meant moving beyond my usual go-to ingredients and methods. For instance, I decided to experiment with olive oil instead of my standard coconut oil, curious to see how it would affect the texture and flavor profile. Furthermore, I simplified the mixing process, opting for a method where dry and wet ingredients were blended in two separate bowls before combining them, aiming for a consistent and manageable batter.
My initial test of this nascent cookie batter wasn’t even for cookies. I used it as a delectable topping for some baked diced apples, creating a makeshift cobbler. The results were astounding! The cobbler topping was incredibly soft, tender, and undeniably cookie-like. It was so remarkably delicious that I instantly knew my next step: to refine this cobbler batter specifically to create the ultimate Paleo cookies.
For those curious about the delicious detour, the recipe for that initial apple cobbler will be shared soon, so keep an eye out!
To recap this delightful chain of culinary inspiration: baking cookies for a friend led me to recreate my favorite oatmeal cookies, which then sparked the idea for a Paleo apple cobbler, and finally, directly culminated in the creation of these exquisite Chocolate Chip Cinnamon Cookies. It was a journey of discovery, ingredient substitution, and pure baking joy.
Why These Cookies Are a Must-Try
These aren’t just “good for paleo” cookies; they are simply fabulous cookies, period. One common concern when baking with olive oil is whether its distinctive flavor will overpower the dessert. Rest assured, these cookies carry no hint of olive oil taste. Instead, they offer a delicate and sweet cinnamony goodness, embodying everything a soft-baked cookie should be – tender, moist, and utterly satisfying.
During the development process, I experimented with various flavor combinations: pure cinnamon, raisin, and chocolate chip. While all versions were delightful, the combination of warm cinnamon and rich chocolate chips emerged as the undisputed winner. It’s a classic pairing, elevated to new heights in this wholesome, non-processed format.

Ingredients
- 1 1/2 cup almond flour
- 2 Tbs coconut flour, (I like Nutiva Organic Coconut Flour)
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp cinnamon, (plus extra to put on top of the cookies)
- 1 egg
- 1 Tbs vanilla extract
- 1/2 cup maple syrup
- 1/4 cup olive oil
- Enjoy Life chocolate chips, (1/4- 1/2 cup, depending on desired chocolate intensity)
Instructions
-
Preheat your oven to 350 degrees Fahrenheit (175°C). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
-
In a medium-sized bowl (Bowl 1), combine the almond flour, coconut flour, salt, baking soda, and cinnamon. Whisk these dry ingredients with a fork until they are thoroughly mixed and evenly distributed.
-
In a separate bowl (Bowl 2), whisk together the egg, vanilla extract, maple syrup, and olive oil. Continue whisking vigorously until the mixture is well blended and begins to thicken slightly.
-
Pour the wet ingredients from Bowl 2 into the dry ingredients in Bowl 1. Whisk until all ingredients are just combined and form a consistent cookie dough. Be careful not to overmix.
-
Now, decide how you’d like to incorporate your chocolate chips (or other toppings like raisins): you can either gently fold them directly into the entire cookie batter for an even distribution, or, for a more pronounced fluffy cookie texture, you can add them on top of each cookie once they are placed on the baking sheet. I personally prefer adding them on top to let the cookie’s fluffiness shine.
-
Cover the cookie dough and place it in the refrigerator to chill for at least 30 minutes. This step is crucial for the dough to firm up, making it easier to handle and contributing to the cookies’ final texture.
-
Once chilled, scoop out tablespoon-sized balls of dough (a 1 Tbs spoon works perfectly for this) and arrange them on your prepared baking sheet, leaving some space between each cookie.
-
Lightly sprinkle each cookie with a pinch of extra cinnamon. If you chose to add chocolate chips on top, now is the time to press a few into the surface of each dough ball.
-
Bake the cookies for 10-12 minutes, or until the edges turn a light golden brown, but the centers still appear soft and slightly underdone. This ensures a wonderfully soft and chewy interior.
-
Remove the baking sheet from the oven and immediately use a cookie spatula to transfer the warm cookies to a wire rack to cool. These cookies are absolutely divine when enjoyed warm, so don’t feel obligated to let them cool completely. This recipe yields approximately 20 delightful cookies.
