Ingredients
For the Salad:
- 10 ounces kale (Tuscan kale or baby kale recommended)
- 4 large eggs
- 1 large avocado, diced
- 2 large tomatoes, diced
- 8 strips of nitrate-free bacon
- 1 pound boneless, skinless chicken breast
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 Tablespoons fresh lemon juice
- 3/4 cup crumbled blue cheese (or feta cheese)
For the Dressing:
- 3 Tablespoons balsamic vinegar
- 5 Tablespoons extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Hard-Boil the Eggs: Place 4 eggs in a pot and cover with cold water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Immediately transfer to an ice bath for 5-10 minutes. Peel once cool.
- Cook the Bacon: Arrange 8 bacon strips on a paper towel-lined microwave-safe plate, cover with more paper towels. Microwave for 6-8 minutes until crispy. Drain on fresh paper towels, then crumble once cooled.
- Cook the Chicken: Season chicken breast with 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp salt, 1/4 tsp pepper, and 2 Tbsp lemon juice. Cook in a frying pan over medium heat for 10-12 minutes, flipping occasionally, until cooked through and golden. Let cool slightly, then dice.
- Prepare the Dressing & Kale: In a bowl or jar, whisk together 3 Tbsp balsamic vinegar, 5 Tbsp olive oil, 1 tsp Dijon mustard, 1/4 tsp salt, and 1/4 tsp pepper until creamy. Place 10 oz kale in a large mixing bowl, pour about 3/4 of the dressing over it, and gently massage into the leaves for 1-2 minutes until softened.
- Assemble and Serve: Divide the massaged kale among individual plates. Arrange the diced chicken, diced tomatoes, crumbled bacon, diced avocado, quartered hard-boiled eggs, and crumbled blue cheese (or feta) on top. Drizzle with the remaining dressing before serving. Enjoy immediately!
