  • 4 Tbs fresh oregano, (leaves taken off the stem)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 7 Tbs olive oil, divided
  • 3 tsp paprika
  • 3 lbs potatoes, halved and quartered
  • 1 lb carrots, sliced 2 inches long
  • 8 ounces mushrooms, sliced

Instructions

  1. Preheat your oven to a high temperature of 450 degrees F (230 degrees C).
  2. Place the heart of shoulder roast into a sturdy 12 x 16 inch roasting pan. Pour any liquid that came with the meat packaging into the pan to add moisture and flavor to the base.
