Fudgy Paleo Brownies (GF)
A rich chocolate brownie that’s suitable for anyone following a paleo diet.

Ingredients

  • 4 Tbs melted coconut oil
  • 3/4 cup Enjoy Life chocolate chips (separated: 1/4 cup for melting, 1/2 cup for folding in) – Note: The Enjoy Life Brand is dairy-free, soy-free, nut-free and gluten-free.
  • 4 Tbs of mashed avocado (this was 1/2 of a medium avocado for me)
  • 1/2 cup maple syrup
  • 1/4 cup honey
  • 4 eggs
  • 2 tsp vanilla extract
  • 3/4 cup almond flour
  • 1/4 cup coconut flour (I use Nutiva Organic)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease an 8×8 inch baking pan with coconut oil, or line it with parchment paper for easy removal.
  3. In a heatproof bowl, combine 4 Tbs of melted coconut oil and 1/4 cup of the chocolate chips.
  4. Place the bowl over a pan of gently simmering hot water (creating a double boiler) and stir continuously until the chocolate is fully melted and smooth. Alternatively, you can microwave the mixture for 30-60 seconds, stirring halfway through. Once melted, remove from heat and whisk the chocolate and coconut oil together thoroughly.
  5. In a large mixing bowl (Bowl #1), add the mashed avocado and the melted chocolate/coconut oil mixture. Whisk both together until the mixture is uniform and smooth.
  6. To Bowl #1, add the eggs, maple syrup, honey, and vanilla extract. Whisk diligently until the entire mixture thickens slightly and all ingredients are well combined.
  7. In a separate, medium-sized bowl (Bowl #2), whisk together the almond flour, coconut flour, unsweetened cocoa powder, salt, and cinnamon. Ensure there are no lumps and the dry ingredients are evenly distributed.
  8. Carefully pour the dry ingredients from Bowl #2 into the wet chocolate mixture in Bowl #1. Mix gently with a fork or whisk, just until the dry ingredients are fully incorporated. Avoid overmixing, as this can lead to tough brownies.
  9. Fold in the remaining 1/2 cup of chocolate chips, distributing them evenly throughout the batter.
  10. Pour the brownie batter into the prepared 8×8 inch pan, spreading it evenly with a spatula.
  11. Bake for 30 minutes. A toothpick inserted into the center should come out mostly clean, though the brownies will still look moist in the center, which is perfect for a fudgy texture.
