This Dairy-Free Brussels Sprouts Casserole isn’t just another side dish; it’s a culinary triumph that consistently delivers on flavor, health, and versatility. Here’s why this recipe deserves a prime spot in your cooking repertoire:
- A Delicious Reinvention of Brussels Sprouts: For anyone who has struggled to enjoy Brussels sprouts, this recipe is a game-changer. It transforms these often-misunderstood vegetables into a crave-worthy dish, showcasing their best attributes with a rich, savory, and slightly sweet flavor profile. The baking process tenderizes the sprouts while allowing their natural sweetness to emerge, perfectly balanced by the smoky bacon and creamy sauce. Even the most skeptical eaters often find themselves asking for seconds!
- Unbelievably Dairy-Free and Creamy: One of the most remarkable aspects of this casserole is its incredible creaminess, achieved without a single drop of dairy. The clever combination of high-quality full-fat coconut cream and nutritional yeast creates a luxurious, velvety sauce that impeccably mimics traditional cheese sauces with uncanny accuracy. Your guests will be astonished to learn it’s entirely dairy-free, making it a fantastic and inclusive option for those with allergies, intolerances, or specific dietary preferences.
- Perfect for Dietary Restrictions: This recipe is a dream come true for individuals following a Dairy-free, Paleo, or Whole30 diet. Every ingredient is carefully selected to adhere to these strict dietary guidelines, ensuring a wholesome and compliant meal without compromising on taste. It allows everyone at the table to enjoy a truly satisfying and indulgent dish, regardless of their specific dietary needs, promoting healthy eating without feeling restrictive.
- Irresistible Bacon Flavor: The addition of crispy, savory bacon introduces a crucial layer of smoky depth and a delightful textural contrast that elevates the entire dish. The bacon bits are not just a garnish; they are integral to the flavor, providing a satisfying crunch against the tender Brussels sprouts and creamy sauce. This savory element makes the casserole incredibly appealing and utterly delicious, balancing the richness of the cream with a salty, smoky note.
- Crafted with Wholesome, Healthy Ingredients: Beyond its fantastic taste, this casserole is made with a handful of healthy, nutrient-dense ingredients. Brussels sprouts themselves are packed with vitamins (especially K and C) and dietary fiber, crucial for digestion and overall health. Coconut cream offers beneficial healthy fats, and nutritional yeast provides a boost of B vitamins and that distinct cheesy flavor without the dairy. This recipe truly proves that comfort food can also be exceptionally good for you, nurturing your body while delighting your palate.
- Effortlessly Elegant & Easy to Prepare: Despite its gourmet taste and impressive presentation, this casserole is surprisingly straightforward to prepare. The step-by-step instructions are clear and easy to follow, allowing you to create an impressive dish that looks and tastes complex but requires minimal effort. It’s perfect as a standalone side dish, a key component of a larger holiday spread, or even a light main course when paired with a simple salad. Its adaptability ensures it can fit seamlessly into any menu.
Key Ingredients for Success: Crafting the Perfect Casserole
The magic of this dairy-free Brussels sprouts casserole lies in its carefully selected ingredients, each playing a vital role in creating its rich flavor and creamy texture. Here’s a closer look at what you’ll need and why these choices matter, along with tips for selection and preparation:

- Brussels Sprouts: The undeniable star of our dish! For the best flavor and texture, aim for smaller to medium-sized Brussels sprouts; they tend to be sweeter and cook more uniformly. If you only find larger sprouts, it’s crucial to cut them in half (or even quarter them if exceptionally big) to ensure they tenderize properly and integrate well into the casserole. Always trim the tough, woody ends and remove any loose or yellowed outer leaves before cooking for the freshest taste.
- Bacon: Crispy, salty bacon adds a crucial layer of smoky, savory depth and a delightful textural contrast that truly elevates this casserole. For strict Paleo and Whole30 compliance, always choose nitrate-free and sugar-free bacon. This ensures you’re enjoying pure, unadulterated savory flavor without any unnecessary additives. The rendered bacon fat also contributes to the richness of the dish, adding another layer of flavor.
- Olive Oil: A foundational ingredient, olive oil is used for sautéing the Brussels sprouts, which helps them caramelize and become tender. It also acts as a carrier for the flavors of the seasonings. Using a good quality extra virgin olive oil can subtly enhance the overall taste with its mild, fruity notes.
- Garlic Powder: This provides a consistent, warm, and pungent aromatic note that perfectly complements the earthy flavor of Brussels sprouts. Garlic powder is an efficient way to infuse a deep garlic flavor throughout the entire dish, blending seamlessly into the sauce.
- Onion Powder: Working in harmony with garlic powder, onion powder adds a subtle sweetness and savory depth. It helps to round out the overall seasoning profile, contributing to that classic comforting casserole taste without needing to chop fresh onions.
- Paprika: My personal preference for this recipe is sweet paprika, which offers a mild, earthy, and slightly sweet flavor, enhancing the color and warmth of the casserole without any heat. However, if you enjoy a more intense, smoky undertone, smoked paprika can be a wonderful alternative, infusing a distinct campfire-like aroma that pairs beautifully with bacon.
- Ground Ginger: This is a key ingredient that might seem unexpected but is absolutely essential! Ground ginger introduces a subtle warmth and a unique zesty, peppery note to the creamy sauce. It’s a secret weapon that elevates the dish beyond typical casserole flavors, adding a layer of complexity and brightness that truly sets it apart.
- Coconut Cream: This is the hero of our dairy-free creamy sauce. It’s absolutely crucial to use high-quality, full-fat coconut cream (not the thinner coconut milk, unless you’re using the thick cream scooped from a chilled can) to achieve the desired luscious richness and velvety texture. My top recommendation is Savoy coconut cream, as it boasts a wonderfully neutral flavor profile that won’t overpower the dish with a strong coconut taste, blending seamlessly into the creamy base.
- Coconut Aminos: This essential seasoning provides a fantastic umami depth, serving as a perfect soy-free and gluten-free alternative to soy sauce. It’s ideal for Paleo and Whole30 diets, adding a lovely savory sweetness and complex flavor that beautifully balances the other elements in the sauce.
- Nutritional Yeast: A true game-changer for dairy-free cooking! Nutritional yeast imparts a distinct, cheesy, and nutty flavor that is vital for achieving the comforting “casserole” taste without actual cheese. The taste can vary significantly between brands, so I highly recommend using a brand that you already know and love. Anthony’s Nutritional Yeast is a personal favorite that has transformed my dairy-free culinary creations.
- Salt: Essential for proper seasoning and enhancing all the other wonderful flavors in the dish. Adjust to your personal preference throughout the cooking process.
- Water: Used strategically during the initial cooking of the Brussels sprouts to help them steam and tenderize without burning or drying out. This ensures they reach the perfect tender-crisp consistency before being enveloped in the creamy sauce.

Additions and Smart Substitutions: Tailoring the Casserole to Your Taste
This Brussels sprouts casserole is wonderfully adaptable, allowing you to customize it based on your dietary needs, pantry staples, or personal preferences. Don’t hesitate to experiment with these thoughtful additions and smart substitutions to make this recipe truly your own:
- For a Vegan Option (Omit Bacon): If you’re looking to make this recipe entirely plant-based or simply prefer to skip the meat, you can easily omit the bacon. The casserole will still deliver a rich and savory flavor from the coconut aminos and nutritional yeast. To add an extra layer of umami and a hint of smoky flavor, consider a sprinkle of smoked paprika or a dash of liquid smoke. You could also experiment with crispy fried shallots or mushrooms for added texture.
- Fresh vs. Ground Ginger: While ground ginger offers the convenience of a readily available spice and consistent flavor, you can absolutely use fresh grated ginger for a brighter, more pungent kick. If opting for fresh ginger, grate about 1 teaspoon and add it to the pan with the other seasonings when you begin cooking the Brussels sprouts. Remember to adjust the amount to your taste, as fresh ginger can be quite potent.
- Balsamic Vinegar Instead of Coconut Aminos: If coconut aminos aren’t readily available in your local grocery store, or if you simply prefer a different flavor profile, balsamic vinegar makes an excellent alternative. It will lend a tangy, slightly sweet, and complex note to the sauce, though the overall flavor will shift slightly from the original umami depth provided by the aminos. Choose a good quality balsamic for the best results.
- Soy Sauce (Not Paleo/Whole30 Compliant): For those who don’t follow strict Paleo or Whole30 dietary guidelines, regular soy sauce can be used as a substitute for coconut aminos. However, please be aware that soy sauce contains gluten and soy, so this substitution will make the recipe non-compliant for these specific diets. It will, however, provide a familiar savory and salty flavor that many enjoy.
- Alternative Creams for Dairy-Free Richness: The coconut cream is key for achieving that dairy-free lusciousness. However, you have other excellent options:
- Oat Cream: A fantastic and increasingly popular dairy-free alternative. Oat cream is typically neutral in flavor and provides excellent creaminess and thickness, making it a superb choice if you’re avoiding coconut due to preference or allergy.
- Thick Coconut Milk: If you can’t find dedicated coconut cream, a can of full-fat coconut milk can be used. For best results, chill the can overnight in the refrigerator. The thick, creamy part will separate and rise to the top, which you can then scoop out and use. Avoid the thinner, refrigerated coconut milk beverage.
- Heavy Cream (Not Dairy-Free/Paleo/Whole30): For those who consume dairy and aren’t adhering to dairy-free, Paleo, or Whole30 diets, traditional heavy cream can be used for an ultra-rich and classic casserole experience. This will significantly alter the dietary compliance of the recipe.
- Add a Spicy Kick: For those who love a bit of heat, consider sprinkling in a pinch of red pepper flakes with the other seasonings when sautéing the sprouts. Alternatively, a dash of your favorite Whole30-compliant hot sauce can be stirred into the creamy sauce before baking for a delightful warmth.
- Herbal Infusion: Fresh or dried herbs can beautifully enhance the savory profile of this casserole. Rosemary, thyme, or sage pair exceptionally well with Brussels sprouts and bacon. Add them during the sautéing stage to allow their flavors to infuse into the dish.
- Nutty Topping for Texture: For an extra layer of crunch and rich flavor, consider adding some chopped pecans or walnuts to the casserole during the last 10 minutes of baking. This creates a wonderful textural contrast and a deeper, roasted flavor.
Step-by-Step Cooking Guide: Achieving Casserole Perfection
Creating this delicious dairy-free Brussels sprouts casserole is a straightforward process when you follow these easy steps. Each stage is designed to build layers of flavor, ensuring a perfectly cooked and incredibly satisfying dish that will impress everyone at your table.

Step 1: Prepare the Bacon
Before you begin, preheat your oven to 375°F (190°C), preparing it for the final bake. Next, for perfectly crispy bacon with minimal mess, lay your bacon slices flat between two pieces of paper towels on a microwave-safe plate. Microwave for approximately 5 minutes for 5 slices. Cooking time may vary slightly depending on your microwave’s wattage and bacon thickness, so adjust as needed until it’s perfectly crisp. Once cooked, remove and allow the bacon to cool completely. This step is crucial for achieving that delightful crunch. Once cooled, easily crumble the bacon into small pieces and set aside; it will be added later to maintain its crisp texture in the casserole.

Step 2: Sauté and Season the Brussels Sprouts
In a large oven-safe skillet or a sturdy Dutch oven (a 3-quart cast iron Dutch oven, roughly 15 x 4 x 13 inches, works perfectly for this recipe, allowing for seamless transition from stovetop to oven), heat 3 tablespoons of olive oil over medium heat. Once the oil shimmers, add the trimmed Brussels sprouts to the pan. Season them generously with 1 teaspoon each of garlic powder and onion powder, ½ teaspoon of salt, ½ teaspoon of paprika (using either sweet or smoked paprika, depending on your flavor preference), and ½ teaspoon of ground ginger. Stir everything together thoroughly to ensure the Brussels sprouts are evenly coated with the aromatic spice blend and olive oil. This initial sautéing step is vital for developing rich flavor and a slight caramelization on the sprouts.

Step 3: Tenderize the Brussels Sprouts
Continue to cook the seasoned Brussels sprouts in the pan for about 10 minutes, stirring occasionally to ensure even cooking and prevent sticking. During this tenderizing process, periodically add 2 tablespoons of water to the pan every few minutes, especially if you notice the pan drying out or the sprouts starting to stick. This technique helps to gently steam the Brussels sprouts, ensuring they become tender-crisp – soft enough to be enjoyable in a casserole, but still retaining a pleasant bite – while developing a lovely caramelized exterior. This pre-cooking step is crucial before adding the creamy sauce.

Step 4: Incorporate the Creamy Sauce Ingredients
Once the Brussels sprouts have achieved that perfect tender-crisp texture, remove the pan from the heat. This is when we build the creamy, dairy-free sauce. Pour 1 cup of rich, full-fat coconut cream directly over the sautéed sprouts. Then, generously sprinkle 3 tablespoons of coconut aminos over the mixture for an umami boost, followed by 1 tablespoon of nutritional yeast, which is vital for imparting that essential cheesy, savory flavor without any dairy. Finally, add the previously crumbled crispy bacon. These ingredients will form the core of our delectable dairy-free sauce, ready to be combined.

Step 5: Mix and Combine for Even Flavor
With all the creamy sauce ingredients now in the pan, it’s time to bring it all together. Thoroughly mix the coconut cream, coconut aminos, nutritional yeast, and crumbled bacon with the cooked Brussels sprouts. Stir gently but firmly until every single sprout is beautifully coated in the creamy, savory sauce. This step is crucial for distributing the flavors evenly and ensuring that each bite of the casserole is bursting with taste. Take a moment to taste the mixture and adjust the seasoning if necessary; you might want to add a little more salt or coconut aminos to perfectly suit your palate.

Step 6: Bake to Golden Perfection
Now, the culmination of your efforts! Transfer the skillet or Dutch oven directly into your preheated oven. Bake the casserole for 15-20 minutes, or until the sauce is visibly bubbly around the edges and the Brussels sprouts are thoroughly tender. The top should develop a beautiful golden hue, and the aromas filling your kitchen will be utterly irresistible. The baking process allows the flavors to meld beautifully and the sauce to thicken slightly. Once baked, carefully remove the casserole from the oven and let it rest for a few minutes before serving. This brief resting period allows the sauce to set slightly, enhancing the overall texture and making it easier to serve.

Expert Cooking Tips for Perfection: Elevate Your Casserole
To ensure your dairy-free Brussels sprouts casserole turns out perfectly every time, achieving that ideal balance of tender sprouts, crispy bacon, and creamy sauce, keep these expert tips in mind. They address common questions and offer insights to help you achieve the best flavor and texture:
Tip 1: Brussels Sprout Size Matters. Pay close attention to the size of your Brussels sprouts when you’re selecting them. Small and medium sprouts are ideal for this casserole as they cook more evenly and tenderize beautifully. If you happen to have larger ones, it’s absolutely essential to cut them in half (or even quarter them if they are exceptionally big) to ensure they cook through at the same rate as the smaller ones. This prevents some sprouts from being unpleasantly undercooked and overly firm while others are perfectly tender.
Tip 2: Choose the Right Cookware. Using an oven-safe skillet or a Dutch oven is crucial for the efficiency and success of this recipe. This type of cookware allows you to perform the initial sautéing of the Brussels sprouts on the stovetop and then seamlessly transfer the entire dish to the oven for baking, all in one vessel. This minimizes cleanup and retains all the delicious flavors developed during sautéing. I personally love using a sturdy 3-quart large cast iron Dutch oven (approximately 15 x 4 x 13 inches) because it retains heat exceptionally well, promoting even cooking and a wonderful caramelization on the sprouts, which adds depth of flavor.
Tip 3: Don’t Overcrowd the Pan. When you’re sautéing the Brussels sprouts, it’s vital not to overcrowd your skillet. If the pan is too full, the sprouts will steam rather than sauté and brown properly. Overcrowding prevents the desirable tender-crisp texture and delicious caramelization from forming. If necessary, cook the Brussels sprouts in two separate batches, or use a wider pan to give them ample space to breathe and brown beautifully.
Tip 4: Strategic Water for Tenderization. The periodic addition of water during the initial sautéing phase is a simple yet incredibly effective technique. It helps to gently steam the Brussels sprouts, ensuring they become tender without becoming mushy. Pay close attention to how dry the pan is and add 2 tablespoons of water as needed to prevent any burning and encourage a soft interior texture while the exteriors still get a nice sear.
Tip 5: Quality of Coconut Cream is Key. The flavor of your coconut cream will significantly impact the final taste and creaminess of your casserole. Some brands have a stronger, more noticeable coconut flavor than others. For this recipe, a neutral-tasting, full-fat coconut cream is highly preferred to avoid overpowering the delicate flavors of the other ingredients. Savoy coconut cream is an excellent choice widely available and known for its mild flavor profile that blends beautifully into savory dishes.
Tip 6: Storing and Reheating Leftovers. If you happen to have any delicious leftovers (which is rare, given how good this is!), store them in an airtight container in the refrigerator for up to 3-4 days. The casserole reheats wonderfully, often tasting even better the next day as the flavors meld further. For the best results, reheat in the oven at 350°F (175°C) until warmed through, which helps maintain the tender-crisp texture of the sprouts and the subtle crispness of the bacon. You can also use a microwave for quicker reheating, though the texture might be slightly softer.
Tip 7: Achieving Perfectly Crispy Bacon. Microwaving bacon between paper towels, as described in Step 1, is a quick and highly effective way to get perfectly crispy bacon without the mess of stovetop frying. However, you can also cook bacon in a skillet on the stovetop until crispy or bake it in the oven on a foil-lined sheet. The key is to get it very crispy before crumbling it, as this adds a wonderful and essential textural element to the creamy casserole, providing a delightful crunch in every bite.

Frequently Asked Questions (FAQ)
Here are some common questions about making this creamy dairy-free Brussels sprouts casserole, designed to help you succeed in the kitchen:
- Can I prepare this casserole ahead of time?
Yes, you can absolutely prepare parts of this casserole in advance! To save time, you can cook the bacon and sauté the Brussels sprouts with the seasonings up to two days prior. Store them separately in airtight containers in the refrigerator. When you’re ready to bake, simply combine the cooked sprouts with the coconut cream, nutritional yeast, and crumbled bacon, then proceed with the baking step. This makes it an ideal make-ahead dish for busy holidays or entertaining. - How do I ensure my Brussels sprouts are not bitter?
Bitterness in Brussels sprouts can sometimes be a concern, but there are ways to mitigate it. First, choose fresh, firm sprouts, as older ones tend to be more bitter. The cooking method itself plays a big role: sautéing them first and allowing them to caramelize slightly helps to bring out their natural sweetness and mellow any potential bitterness. The rich, creamy sauce and robust seasonings in this particular recipe are also highly effective at counteracting any inherent bitterness, transforming them into a delightful treat. - What if I don’t have coconut cream on hand?
If you find yourself without coconut cream, don’t fret! As mentioned in the substitutions section, you can use the thick cream from a can of full-fat coconut milk. For best results, chill the can overnight, then scoop out the solid cream that collects at the top. Alternatively, oat cream or another thick, unsweetened dairy-free cream (ensure it’s Paleo/Whole30 compliant if needed) can also work. If dairy isn’t an issue for you, traditional heavy cream is also an option for a classic, rich casserole. - Is this recipe good for meal prepping throughout the week?
Absolutely! This creamy Brussels sprouts casserole is an excellent candidate for meal prepping. Cook a larger batch than needed for one meal, and then divide it into individual portions for healthy and satisfying lunches or dinners throughout the week. It reheats wonderfully, often tasting even better the next day as the flavors have more time to meld and deepen, making your meal prep both easy and delicious. - Can I add other vegetables to this casserole?
While this recipe is specifically designed to highlight the deliciousness of Brussels sprouts, you can certainly experiment with adding other complementary vegetables. Chopped cauliflower florets, broccoli florets, or even sliced mushrooms could be wonderful additions. Keep in mind that different vegetables have varying cooking times, so ensure they are tender before mixing them with the sauce and baking. You might need to pre-cook denser vegetables slightly longer.

Preheat oven to 375°F (190°C).
-
Place bacon in between two paper towels and microwave for 5 minutes (for 5 slices) until crispy. Once cooled, crumble it into pieces.
-
Add olive oil to a large oven-safe skillet or Dutch oven and heat over medium heat. Add Brussels sprouts and season with garlic powder, onion powder, ginger, salt, coconut aminos, and paprika. Cook, stirring occasionally, for 10 minutes total. During this time, add 2 Tbs of water to the pan every few minutes as needed to prevent burning and help tenderize the sprouts.

Remove the Brussels sprouts from heat. Pour the coconut cream on top, then sprinkle with nutritional yeast and the crumbled bacon.

Bake the casserole in the preheated oven for 15-20 minutes, or until the sauce is bubbly and the Brussels sprouts are tender-crisp. Serve hot and enjoy!
Notes
- You can omit the bacon if you prefer a Vegan version of this recipe.
- Instead of ground ginger, use fresh grated ginger (approx. 1 tsp) for a brighter flavor.
- Balsamic vinegar can be used in place of coconut aminos for a tangy twist.
- Soy sauce can substitute coconut aminos, but note that the recipe will no longer be Paleo or Whole30 compliant due to soy and gluten content.
- For coconut cream, you can use oat cream or the thick, creamy part of full-fat coconut milk (chilled overnight). If dairy is not an issue, heavy cream is also an option.
