Ingredients

Cake Ingredients:

  • 3 1/2 Tbs melted coconut oil
  • 1/2 cup honey
  • 3 eggs, (room temperature)
  • 1 tsp vanilla
  • 1/2 cup coconut milk
  • 1 cup mashed bananas, (this was 2 bananas for me)
  • 1 1/4 cup almond flour
  • 3/4 cup coconut flour, (I use Nutiva Organic)
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder

Filling ingredients:

  • 1/2 cup maple syrup
  • 1 1/2 Tbs cinnamon
  • 1 tsp unsweetened cocoa powder

Crumb Topping ingredients:

  • 2 cups almond flour
  • 1/4 cup maple syrup
  • 1 Tbs cinnamon
  • 2 Tbs melted coconut oil

Instructions

  1. Preheat the oven to 350 degrees F (175 C). Grease a 9×13 inch baking pan with some melted coconut oil and use a silicone basting brush to evenly coat the bottom and all sides.

Filling instructions:

  1. In a medium bowl (Bowl 1), combine all ingredients for the filling: maple syrup, 1 Tbs cinnamon, and 1 tsp unsweetened cocoa powder. Mix thoroughly with a fork until the cinnamon and cocoa powder are fully incorporated and no dry clumps remain. Set the filling aside.

Crumble topping instructions:

  1. In another medium bowl (Bowl 2), mix 2 cups almond flour and 1 Tbs cinnamon together for the crumble topping. Next, add 2 Tbs melted coconut oil and 1/4 cup maple syrup. Mix until the ingredients combine to form a “crumble”-like consistency, ensuring there are no visibly dry sections. Set this bowl aside.

Cake instructions:

  3. Gradually add the dry ingredients from Bowl 3 into Bowl 4, mixing on medium speed until just combined. Stir in the 1 cup mashed bananas and 1/2 cup coconut milk, mixing again until the batter is uniform. Pour half of the batter into the prepared 9×13 inch pan. Use a spatula to gently spread the batter into a thin, even layer across the bottom of the pan. Don’t worry if the dough seems a bit difficult to spread or tears slightly; just do your best to cover the entire surface.
  4. Evenly pour the filling from Bowl 1 over the batter in the pan. Use a pastry brush or the back of a spoon to gently spread the filling across the surface of the batter.
  5. Carefully spoon the remaining half of the cake batter on top of the filling layer. Using a knife and a spatula, gently spread this top layer as thinly and evenly as possible across the pan. You might find that the liquid filling slightly mixes into the top batter layer, which is perfectly fine and will create a beautiful swirl effect.
  6. Finally, evenly sprinkle the crumble topping from Bowl 2 over the top layer of batter in the pan. I found it easiest to use my hands to distribute the crumble, gently pressing it onto the surface.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. I baked mine for 40 minutes, which resulted in beautifully browned edges, but your oven may vary, so check for doneness a few minutes earlier.
