Why Choose a Paleo & Gluten-Free Strawberry Shortcake?
In today’s world, more and more people are turning to dietary choices like Paleo and gluten-free for various reasons, from managing sensitivities and allergies to pursuing a healthier lifestyle. Traditional strawberry shortcake often relies on wheat flour and dairy, making it off-limits for many. Our Paleo and gluten-free version is crafted with almond and coconut flours, and dairy-free alternatives, ensuring everyone can enjoy this beloved treat. It’s not just about exclusion; it’s about inclusion – creating a dessert that is naturally delicious, nutrient-dense, and accessible. You won’t find any refined sugars or artificial ingredients here, just pure, unadulterated goodness that supports your well-being while satisfying your sweet tooth.
Beyond meeting dietary requirements, this recipe shines in its flavor profile. The natural sweetness of honey complements the tartness of strawberries, while the blend of almond and coconut flours creates a tender crumb that holds up beautifully to the juicy fruit and creamy topping. It’s a dessert that feels indulgent but leaves you feeling light and energized, a testament to the power of wholesome ingredients.
The Versatility of Serving: Your Shortcake, Your Way
One of the most appealing aspects of this Paleo Strawberry Shortcake recipe is its incredible versatility. There’s no single “right” way to enjoy these delightful shortcakes, allowing you to customize your experience based on your mood or occasion. Whether you prefer them as a simple treat or an elaborate dessert, they consistently deliver on taste and satisfaction.
- **Enjoy Them Plain:** Warm out of the oven, the shortcakes are fantastic on their own, offering a delicate sweetness and a wonderfully soft, crumbly texture.
- **Classic Topping:** A simple dollop of our homemade coconut whipped cream and a scattering of fresh strawberries elevates them to classic perfection.
- **Berry Bliss:** For those who adore strawberries, pile on extra whipped cream and an abundance of sliced berries, letting the juices meld with the shortcake.
- **Shortcake Sandwiches:** For a truly unique and portable treat, slice a shortcake in half horizontally, spread generous amounts of coconut whipped cream in the middle, and add a few strawberry slices. These shortcake sandwiches are particularly delightful chilled. I once made a batch and kept them in the fridge for about 15-20 minutes before serving. The cooling not only helps the coconut cream set beautifully, preventing it from melting too quickly, but also creates a refreshing texture contrast. While the flavors remain equally amazing whether warm or cold, the chilled presentation definitely adds a touch of elegance.
My personal favorite way to enjoy them is warm, fresh from the oven, with a generous spoonful of whipped cream. The warmth of the shortcake slightly melts the cream, creating an irresistible blend. However, my boyfriend is a staunch advocate for the chilled shortcake sandwiches, insisting they must be mentioned on the blog! And he’s right – to each their own! Whether you prefer them warm, cold, simple, or extravagant, you truly can’t go wrong with these all-natural, non-processed delights. It’s a joy to savor a version of strawberry shortcake that is both incredibly tasty and truly good for you.
Mastering Dairy-Free Coconut Whipped Cream
Achieving perfectly fluffy dairy-free whipped cream from coconut cream can sometimes feel like a culinary puzzle, but I’ve finally cracked the code to a consistently successful batch. The key lies in careful preparation and chilling. Here’s my tried-and-true method for a stable and delicious Paleo whipped cream:
- **Start Cold:** Begin with one can of full-fat coconut cream, ensuring it has been chilled in the refrigerator for at least 24 hours. The colder the cream, the better it will whip. For even better results, chill your mixing bowl (preferably metal) and whisk attachment in the freezer for 15-20 minutes before you begin.
- **Initial Mix:** Scoop the thick coconut cream solids from the top of the chilled can into your cold mixing bowl. Discard any watery liquid at the bottom, or save it for smoothies. Add 1 tablespoon of honey, 1 tablespoon of maple syrup, and 3 tablespoons of vanilla extract. Using a stand mixer with a whisk attachment (or a hand mixer), beat the mixture on medium-high speed for a few minutes until it starts to combine and lighten slightly.
- **First Chill:** Once combined, cover the bowl and place it, along with the whisk attachment, back into the refrigerator for approximately 45 minutes. This chilling period is crucial for the fats to firm up, making them more receptive to whipping.
- **Second Whip:** After 45 minutes, remove the bowl and whisk from the fridge. Beat the mixture again on medium-high speed for another few minutes. You should notice it thickening considerably this time, becoming more airy and cream-like.
- **Second Chill (if needed):** If the consistency isn’t quite as thick and stable as you’d like, return the bowl to the fridge for an additional 30-45 minutes. This extra chill can make all the difference.
- **Final Whip:** Give it one last whip. At this point, it should transform into beautifully fluffy, stable whipped cream, ready to adorn your shortcakes.
While this method worked reliably for me, don’t be afraid to experiment to find what works best with your specific ingredients and equipment. One crucial tip I’ve discovered is that the quality of your coconut cream makes a significant difference. I’ve consistently achieved better results with coconut cream that contains no preservatives or stabilizers. Brands like Savoy have proved to be excellent choices, yielding perfectly smooth and stable whipped cream every time.
Baking Tips for Perfect Paleo Shortcakes
Creating delicious Paleo shortcakes is simpler than you might think, especially with a few helpful tips:
- **Measure Accurately:** Especially with gluten-free and alternative flours like almond and coconut, precise measurements are crucial. Use a kitchen scale for the most accurate results, or level off your measuring cups carefully.
- **Don’t Overmix:** Overmixing the dough can lead to a tough texture. Mix until just combined and thickened to maintain that desirable tender crumb.
- **Evenly Sized Shortcakes:** For consistent baking and presentation, try to scoop and mold your shortcakes into similar sizes. A cookie scoop can be useful for this.
- **Ingredient Quality:** As with the coconut cream, the quality of your almond flour and coconut flour can impact the final texture. Opt for fine, blanched almond flour and fresh, organic coconut flour.
- **Resting the Dough:** While not strictly required, letting the dough rest for 5-10 minutes after mixing can allow the flours to absorb moisture more fully, leading to a better texture.
- **Storage:** Leftover shortcakes can be stored in an airtight container at room temperature for a day or two, or in the refrigerator for up to 4 days. If topped with whipped cream, they are best enjoyed fresh, but shortcake sandwiches will hold up well chilled.

Ingredients
- 1 cup diced strawberries
- 2 tsp vanilla extract
- 1/2 cup and 2 tsp honey, (divided; use 1/2 cup and 2 tsp at different times)
- 1 cup almond flour
- 1/2 cup coconut flour, (I use Nutiva Organic coconut flour)
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1/3 cup coconut milk
- 2 Tbs melted coconut oil
Instructions
-
Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
-
Dice 1 cup worth of fresh strawberries.
-
In a small bowl, combine the diced strawberries with 2 teaspoons of vanilla extract and 2 teaspoons of honey. Mix well to coat the strawberries. Set this mixture aside.
-
In a medium mixing bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, and salt with a fork until thoroughly combined.
-
In a separate medium bowl, combine the coconut milk, melted coconut oil, eggs, and the remaining 1/2 cup of honey. Mix with an electric mixer until fully incorporated.
-
Gradually add the dry flour mixture to the wet milk and egg mixture. Continue mixing with an electric mixer until everything is well-blended and the batter thickens to a dough-like consistency.
-
Gently fold in the reserved diced strawberries into the dough using a fork until they are evenly distributed throughout the mixture.
-
Scoop approximately 2 tablespoons of the dough onto a baking sheet lined with a silicone baking mat or parchment paper.
-
Carefully mold each scoop of dough into a flat, oval shape. Repeat this process until all the dough has been used. This recipe should yield about 14 small shortcakes.
-
Place the baking sheet on a lower oven rack and bake for 20 minutes, or until the tops of the shortcakes are golden brown and cooked through.
-
Allow the shortcakes to cool on the baking sheet for at least 10 minutes before transferring them to a wire rack to cool completely.
-
Serve warm with a generous dollop of homemade coconut whipped cream and extra fresh strawberries. The detailed recipe for the whipped cream is provided earlier in this post.
