A delicious granita with a festive twist.

Ingredients

  • 2 oranges
  • 1 grapefruit
  • 3/4 of a 16 ounce crate/basket/container of strawberries
  • 1/4 of a lemon
  • 1/4 cup + 1 Tbs honey

Instructions

  1. Peel the oranges and grapefruit. Cut the fruit into pieces that will fit into your juicer. Leave the lemon peel on the lemon. ( A good quality juicer like the Waring Pro Juicer makes juicing quick and cleanup easy.)
  2. Put the oranges, grapefruit, strawberries, and lemon into a juicer. This process should yield approximately 2 cups of fresh juice. Once juiced, mix the juice well with a fork to combine all flavors.
  3. Measure out 1 1/2 cups of the mixed juice and pour it into a pot on the stove. Add 1/4 cup plus 1 tablespoon of honey to the pot. Heat this mixture over medium heat for about 5 minutes, stirring occasionally, until the honey is fully dissolved.
  4. After 5 minutes, turn off the heat. Stir in the remaining 1/2 cup of fresh juice. Set the entire pot aside and allow the mixture to cool for approximately 30 minutes at room temperature.
  5. Carefully pour the cooled liquid into an 8x8x2 inch pan. Place the pan, uncovered, into the freezer for 2 hours. During this initial 2-hour freezing period, it is crucial to stir the mixture every 30 minutes. Make sure to thoroughly mix everything together and scrape any forming ice crystals from all corners of the pan.
  6. After the initial 2 hours of stirring, cover the pan tightly with aluminum foil. Return it to the freezer and let it freeze without any further stirring for at least 4 hours. You can leave it in for longer than 4 hours, but do not remove it before this time has passed to ensure proper crystallization.
  7. Once the 4 hours (or more) are up, remove the pan from the freezer. Use a fork to vigorously scrape the surface of the frozen granita until it flakes and begins to resemble shaved ice. If the mixture is too hard to scrape, return it to the freezer for a bit longer until it reaches the desired consistency. Serve into bowls or elegant parfait glasses and enjoy your homemade granita!

Note – if you want to add coconut whipped cream on top:

  1. Place a can of full-fat coconut cream in the fridge at least 8 hours or overnight before you start making the granitas. This allows the cream to solidify and separate from the liquid.
  2. Right before serving the granitas, take the chilled can out of the fridge.
  3. Carefully open the can and scoop out the hardened cream, leaving the watery liquid behind (this liquid can be saved for smoothies or other recipes).
  4. Transfer the solid coconut cream into a mixing bowl.
  5. Add 1 tablespoon of honey, 1 tablespoon of maple syrup, and 1 tablespoon of vanilla extract to the bowl. Mix well with a hand-held mixer until light and fluffy, resembling traditional whipped cream.
